I have a few parents of gifted middle school children in my parents group interested in programs geared towards medicine/biology in IL. I have only found one accelerated weekend in veterinary medicine. If anyone knows a resource, please let me know.
You may do a google search for vocation vacations. I remember seeing that they have all sorts of opportunties for 12yrs and older to explore all types of jobs.

I did find something called Mini Med School but it is only for high school students and nothing around here is running anything remotely like it.
It obviously isn't local, but Davidson's summer THINK program (for 13-16 year olds) has a public health biology class as part of the curriculum this summer.

Our local hospital offers "Adventures in Medicine" program for middle & high schoolers. Once a month they have a specialty session (dissections, casting, radiology, etc.) My middle school son has really enjoyed it. You might contact your local hospitals to see if they have an outreach program.
In Cleveland the Natural History Museum recently merged with HealthSpace, which used to have camps and classes on medicine topics. Here is their link, looks like they have distance learning options, or if anyone is interested in the summer camps.

I also second checking with local hospitals and health care organizations. There is such a shortage of certain medical professionals that hospitals are now providing classes as recruiting tools to middle and high school students.
How close are you to St.Louis? Academy of Science has some activities especially on stem cells
