Murderous Maths! Here's a link to the book titles that touch on primes. You'll need to scroll to the bottom of the page to see the books.

Martin Gardner wrote a recreational mathematics column for Scientific American for years. The columns have been collected into books. He's also written a lot of other fun and interesting stuff which you can easy find through your library or purchase inexpensively; here's a list.

Prime sieves are a lot of fun; partially for the idea partially because you can work them manually or write little programs that use them. I'd start at this Wikipedia article:

How much number theory does your son have under his belt? A book like "Excursions in Number Theory" by Ogilvy might work. Its not a textbook and had I thought a pretty fun chapter on primes.
